Description

Delicious and healthy zucchini fritters made with creamy feta, aromatic dill, and fresh red onion, perfect for any occasion.


Ingredients

  • 4 medium zucchini, grated and well wrung out
  • 2/3 cup panko crumbs
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 cup finely diced red onion
  • 1 cup flour
  • 1/2 cup feta cheese, crumbled or shredded
  • 2–3 teaspoons dried dill (or 1.5 tablespoons fresh dill)
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • Olive oil or avocado oil, for frying

Instructions

  1. Grate the zucchini and squeeze out excess water using a clean towel or cheesecloth.
  2. In a large bowl, whisk together the eggs and baking powder until well combined.
  3. Add flour, onion powder, salt, pepper, and panko crumbs, stirring until combined without overmixing.
  4. Gently fold in the grated zucchini, feta cheese, dill, and finely diced red onion.
  5. Heat a nonstick skillet on medium heat and add enough oil to coat the bottom.
  6. Form small patties with about 2 tablespoons of the mixture and flatten them gently.
  7. Fry each fritter for 3-4 minutes on each side until golden brown and crisp.
  8. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
  9. Serve warm with Greek yogurt, tzatziki, or sour cream.

Notes

Ensure to remove excess moisture from zucchini to prevent sogginess. For variations, try different herbs or cheeses.
