A warm and cozy Pumpkin & Cranberry Gratin featuring smooth pumpkin, bright cranberries, warm spices, and a crunchy topping.
Ingredients

- 2 cups pumpkin puree
- 1 cup fresh cranberries
- 1 cup heavy cream
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 tablespoon brown sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine pumpkin puree, fresh cranberries, heavy cream, salt, pepper, nutmeg, cinnamon, and brown sugar. Mix until smooth but keep some berry pieces for texture.
- Spread the mixture evenly in a greased baking dish.
- In another bowl, mix the breadcrumbs with grated Parmesan cheese and melted butter until evenly coated.
- Sprinkle the breadcrumb mixture over the pumpkin and cranberry mixture in an even layer.
- Bake in the preheated oven for 30–35 minutes or until the top is golden and crispy and the filling bubbles at the edges.
- Allow to cool slightly before serving.
Notes
For a deeper taste, roast the pumpkin before mashing it into puree. If you like a lighter gratin, use half-and-half instead of heavy cream.
