Description

A delightful and nostalgic treat that combines the unique texture of potatoes with sweet and nutty flavors.


Ingredients

  • 1 small russet potato (about 1/2 cup mashed), peeled and chopped
  • 68 cups powdered sugar, plus more for rolling
  • 1 teaspoon vanilla extract (optional, but recommended)
  • 2/3 cup creamy peanut butter (or almond butter, cookie butter, or Nutella)

Instructions

  1. Cook the potato until very tender, then drain completely.
  2. Mash the cooked potato until smooth and let it cool slightly.
  3. Add 2-4 cups of powdered sugar to the warm mashed potato and mix until blended.
  4. If using, stir in the vanilla extract.
  5. Gradually add remaining powdered sugar, mixing until a thick dough forms.
  6. On a large sheet of wax paper, sprinkle with powdered sugar and roll the dough into a rectangle about 1/4 inch thick.
  7. Spread an even layer of peanut butter over the surface of the candy.
  8. Roll the candy tightly into a log using the wax paper.
  9. Wrap in wax paper and chill in the refrigerator for at least 30 minutes to 1 hour until firm.
  10. Slice into 1/2 to 1-inch thick pieces and store in an airtight container in the refrigerator for up to 2 weeks.
