Instructions
- Prepare the Pressure Cooker: Start by heating the pressure cooker on medium heat. Add the sesame oil (or peanut oil) and allow it to warm for a minute.
- Sauté Aromatics: Once the oil is hot, add the smashed garlic and chopped onions. Sauté these for about 3-4 minutes until they become fragrant and slightly golden.
- Add Vegetables: Next, toss in the sliced ginger, carrots, and button mushrooms. Stir these for another 3 minutes.
- Combine Broths and Water: Pour in the chicken broth, beef broth, and water. Stir well to mix everything together.
- Pressure Cook: Close the pressure cooker lid, ensuring it is sealed properly. Cook on high pressure for about 10 minutes.
- Release Pressure: Once the cooking is done, carefully release the pressure using the quick-release method. Allow the steam to escape.
- Season the Soup: Open the lid and give the soup a gentle stir. Add salt to taste, adjusting it based on your flavor preference.
- Finish with Scallions: Stir in the chopped scallions just before serving, allowing their flavor to infuse into the soup for a fresh touch.
