- 2 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 cup creamy garlic sauce (homemade or store-bought)
- Optional: cooked rice or quinoa for serving
Instructions
- Begin by marinating the chicken. In a bowl, mix 1 tablespoon of olive oil, salt, pepper, and garlic powder. Add the chicken breasts and marinate for at least 30 minutes.
- While the chicken is marinating, prepare the broccoli. Steam the florets until they are bright green and just tender, about 5 minutes.
- Heat a grill pan over medium heat and add the remaining tablespoon of olive oil. Once the pan is hot, add the marinated chicken breasts. Grill for 6-7 minutes on each side or until fully cooked.
- Remove the chicken from the grill and let it rest for a few minutes. Slice the chicken into strips.
- To assemble the bowls, start with a base of cooked rice or quinoa, if using. Add the steamed broccoli and top with the grilled chicken slices.
- Drizzle the creamy garlic sauce over the chicken and broccoli.
Notes
