Instructions
- Preheat the oven to 425°F (220°C).
- Peel the sweet potatoes and cut them into thin fries.
- In a large bowl, toss the sweet potato fries with olive oil, minced garlic, oregano, thyme, salt, and pepper until evenly coated.
- Spread the fries in a single layer on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
- Remove from the oven and garnish with fresh parsley if desired. Serve hot.
