- 2 quarts fresh strawberries, hulled and sliced
- 2 cups sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 teaspoon lemon juice
- 1/4 teaspoon almond extract (optional)

Instructions
- Prepare your jars: Start by washing your jars in hot, soapy water. Rinse them well and keep them warm until you are ready to use them.
- Mix strawberries and sugar: In a large bowl, combine the sliced strawberries with the sugar. Mix gently and let them sit for about 10-15 minutes until the juices start to release.
- Combine dry ingredients: In a separate bowl, mix cornstarch, salt, and lemon juice.
- Combine strawberry mixture: Stir the dry mixture into the strawberries. Make sure everything is evenly coated.
- Cook the mixture: Transfer the strawberry mixture to a large saucepan. Over medium heat, bring the mixture to a boil while stirring continuously. This process should take about 2-5 minutes until it thickens.
- Add extract: Once thickened, remove the saucepan from heat. If you choose to use almond extract, add it at this stage.
- Fill jars: Pour the hot strawberry filling into the prepared jars. Leave about 1/2-inch headspace at the top of each jar. Wipe the rims of the jars with a clean cloth to ensure a good seal.
- Seal jars: Place the lids on the jars and screw the rings on until they are fingertip tight, but not too tight.
- Process in water bath: Process the jars in a boiling water bath for about 15-20 minutes. This step is essential for proper sealing and preserving the filling.
- Cool and store: Carefully remove the jars from the water bath and let them cool completely on a clean kitchen towel or rack. After 12-24 hours, check the seals and store the sealed jars in a cool, dark place.
