Description

A delightful and fresh meal option bringing the iconic flavors of traditional sushi without the need for rolling. Customize it easily based on your preferences.


Ingredients

  • 1 cup short-grain sushi rice
  • 1.5 cups water
  • 3 tbsp rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 4 oz imitation crab meat (or real crab)
  • 1 medium cucumber, sliced
  • 1 ripe avocado, diced
  • 2 tbsp low-sodium soy sauce
  • Sriracha (optional)

Instructions

  1. Rinse the sushi rice under cold water until clear.
  2. Cook the rice with 1.5 cups of water according to package instructions.
  3. Transfer the cooked rice to a bowl and mix in rice vinegar, sugar, and salt while still warm.
  4. Slice the cucumber and dice the avocado; set aside.
  5. In serving bowls, layer the sushi rice, topped with cucumber, avocado, and imitation crab meat.
  6. Drizzle with low-sodium soy sauce and add Sriracha if desired.
  7. Serve immediately while fresh.
