Description

Delicious BBQ Chicken Quesadillas filled with shredded chicken, smoky BBQ sauce, and melted cheese, served with optional toppings.


Ingredients

  • 2 cups shredded cooked chicken
  • 1/2 cup BBQ sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • Optional toppings: green onions, cilantro, sour cream

Instructions

  1. Combine the shredded chicken and BBQ sauce in a bowl until well coated.
  2. Heat a skillet over medium heat and add 1 tablespoon of olive oil.
  3. Place one tortilla in the skillet and sprinkle half of the cheese over it.
  4. Spread half of the chicken mixture on top of the cheese, then sprinkle with more cheese.
  5. Top with another tortilla.
  6. Cook for 2-3 minutes until the bottom tortilla is golden and crispy, then flip and cook for another 2-3 minutes.
  7. Remove from the skillet, cut into wedges, and serve with optional toppings.

Notes

For best results, use fresh ingredients and avoid overstuffing the quesadillas.
