Delicious BBQ Chicken Quesadillas filled with shredded chicken, smoky BBQ sauce, and melted cheese, served with optional toppings.

- 2 cups shredded cooked chicken
- 1/2 cup BBQ sauce
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 2 tablespoons olive oil
- Optional toppings: green onions, cilantro, sour cream
Instructions
- Combine the shredded chicken and BBQ sauce in a bowl until well coated.
- Heat a skillet over medium heat and add 1 tablespoon of olive oil.
- Place one tortilla in the skillet and sprinkle half of the cheese over it.
- Spread half of the chicken mixture on top of the cheese, then sprinkle with more cheese.
- Top with another tortilla.
- Cook for 2-3 minutes until the bottom tortilla is golden and crispy, then flip and cook for another 2-3 minutes.
- Remove from the skillet, cut into wedges, and serve with optional toppings.
Notes
For best results, use fresh ingredients and avoid overstuffing the quesadillas.
