A quick and easy Bacon Fried Rice recipe that combines crispy bacon with flavorful vegetables and rice for a delightful meal.

- 4 cups cooked rice (preferably day-old)
- 6 strips of bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Green onions, sliced (for garnish)
Instructions
- Cook the bacon in a large skillet or wok over medium heat until crispy, about 5–7 minutes.
- Sauté the diced onion in the remaining bacon grease until translucent, around 3–4 minutes. Add the minced garlic and cook for an additional minute.
- Add the frozen peas and carrots and cook until heated through, about 2–3 minutes.
- Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty space and scramble until fully cooked, then mix everything together.
- Add the cooked rice and crispy bacon to the skillet and mix well.
- Pour the soy sauce and sesame oil over the rice mixture, stir to combine, and cook for another 3–4 minutes until heated through.
- Taste and adjust seasoning with salt and pepper as needed.
- Garnish with sliced green onions before serving.
Notes
Use day-old rice for the best texture. Customize with different vegetables as desired.
