  • 2 cups spinach or kale, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving)

Instructions

  1. Start by cooking the pasta according to the package instructions. Once ready, drain it and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the diced onion and cook it until softened, usually around 3-4 minutes.
  4. Stir in the minced garlic and cook for another minute, allowing it to become fragrant.
  5. Add the Italian sausage to the skillet. Break it up with a spoon and cook until browned and fully cooked through, about 5-7 minutes.
  6. Stir in the undrained diced tomatoes, chopped spinach or kale, Italian seasoning, and the cooked pasta. Mix well until everything is combined.
  7. Cook everything together until the spinach wilts and everything is heated through.
  8. Season with salt and pepper to taste. Serve hot, topped with grated Parmesan cheese for added flavor.
