- 1 pound Italian sausage (sweet or spicy)
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 cups spinach or kale, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese (for serving)
Instructions
- Start by cooking the pasta according to the package instructions. Once ready, drain it and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and cook it until softened, usually around 3-4 minutes.
- Stir in the minced garlic and cook for another minute, allowing it to become fragrant.
- Add the Italian sausage to the skillet. Break it up with a spoon and cook until browned and fully cooked through, about 5-7 minutes.
- Stir in the undrained diced tomatoes, chopped spinach or kale, Italian seasoning, and the cooked pasta. Mix well until everything is combined.
- Cook everything together until the spinach wilts and everything is heated through.
- Season with salt and pepper to taste. Serve hot, topped with grated Parmesan cheese for added flavor.
