Description

Ingredients

  • 1 cup grated zucchini
  • 1 cup fresh blueberries
  • 2 cups milk (or almond milk)
  • 2 eggs
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. Combine the oats, grated zucchini, blueberries, milk, eggs, maple syrup, vanilla extract, baking powder, cinnamon, and salt in a large bowl. Mix until well combined.
  3. Pour the mixture into the prepared baking dish and spread it out evenly.
  4. Bake for 30-35 minutes or until golden brown and set. Check doneness by inserting a fork in the center.
