Ingredients

- 2 cups rice
- 4 cups water or chicken broth
- 1/2 teaspoon turmeric or a pinch of saffron
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 cup peas
- 1 bell pepper, diced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sautéing until softened.
- Stir in the rice, coating it with the oil and aromatics for 2-3 minutes.
- Add water or chicken broth, turmeric (or saffron), salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Simmer for about 20 minutes or until rice is cooked and liquid is absorbed.
- Add peas and diced bell pepper in the last 5 minutes of cooking.
- Fluff the rice with a fork before serving.
Notes
For a creamy texture, consider using coconut milk instead of water or broth.
