Description

Ingredients

  • 1/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 4 oz white chocolate, chopped
  • 1 cup raspberries, chopped and frozen

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and light brown sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour and baking soda, then gradually add to the wet mixture, mixing until just combined.
  5. Fold in the chopped white chocolate and raspberries gently.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them a few inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
