- 1/2 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 4 oz white chocolate, chopped
- 1 cup raspberries, chopped and frozen
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and light brown sugar until smooth.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour and baking soda, then gradually add to the wet mixture, mixing until just combined.
- Fold in the chopped white chocolate and raspberries gently.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them a few inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
