Ingredients

  • 1 large egg

  • 1/2 teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips
  • 1/4 cup crushed peppermint candies

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl.
  3. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg, vanilla extract, and peppermint extract to the butter mixture and mix well.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Fold in semi-sweet chocolate chips until evenly distributed.
  7. Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. Melt white chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
  10. Dip each cooled cookie halfway into melted white chocolate, allowing excess to drip off.
  11. Sprinkle crushed peppermint candies on top of each dipped cookie while still wet.
  12. Allow the white chocolate to set completely before serving or storing.
