Description

A delightful mixture of sweet watermelon and zesty lime, perfect for preserving the taste of summer.


Ingredients

  • 4 cups Watermelon puree
  • 1/4 cup Lime juice
  • 1 tablespoon Lime zest
  • 3 cups Sugar
  • 1 package (1.75 oz) Fruit pectin
  • 1/4 teaspoon Salt

Instructions

  1. In a large saucepan, combine the watermelon puree, lime juice, and lime zest. Stir until well mixed.
  2. Add the sugar and salt, stirring until fully dissolved.
  3. Place the saucepan over medium heat and bring to a boil.
  4. Once boiling, stir in the fruit pectin and boil for another 1-2 minutes.
  5. Remove from heat and ladle the jelly mixture into sterilized jars, leaving some space at the top.
  6. Seal the jars tightly and let them cool to room temperature before refrigerating.

Notes

Use ripe watermelon for best flavor and ensure jars are properly sterilized to avoid contamination.
