- 4 cups Watermelon puree
- 1/4 cup Lime juice
- 1 tablespoon Lime zest
- 3 cups Sugar
- 1 package (1.75 oz) Fruit pectin
- 1/4 teaspoon Salt
Instructions
- In a large saucepan, combine the watermelon puree, lime juice, and lime zest. Stir until well mixed.
- Add the sugar and salt, stirring until fully dissolved.
- Place the saucepan over medium heat and bring to a boil.
- Once boiling, stir in the fruit pectin and boil for another 1-2 minutes.
- Remove from heat and ladle the jelly mixture into sterilized jars, leaving some space at the top.
- Seal the jars tightly and let them cool to room temperature before refrigerating.
Notes
Use ripe watermelon for best flavor and ensure jars are properly sterilized to avoid contamination.
