Description

A fun and flavorful take on classic French fries, combining crispy potatoes with Cajun seasoning and rich cheese sauce.


Ingredients

  • 2 medium/large russet potatoes (about 1¼ pounds)
  • 3 tablespoons extra-virgin olive oil, divided
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon dill weed
  • ¼ teaspoon onion powder
  • Ranch dressing (optional, for serving)
  • Chopped chives or green onions (optional, for garnish)
  • 2 tablespoons unsalted butter
  • 1½ tablespoons all-purpose flour
  • 1 cup milk (low-fat or whole)
  • 1 cup freshly grated sharp cheddar cheese (about 4 ounces)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Cut the potatoes into ¼-inch sticks.
  3. Toss the potato sticks in a bowl with 2 tablespoons of olive oil, Cajun seasoning, garlic powder, dill weed, onion powder, and a pinch of salt.
  4. Spread the seasoned fries evenly on the prepared baking sheet and drizzle with the remaining olive oil.
  5. Bake in the preheated oven for 25–30 minutes, flipping halfway through.
  6. Melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 1 minute.
  7. Slowly add the milk while whisking until smooth and slightly thickened.
  8. Remove from heat and stir in the grated cheddar cheese until melted.
  9. Drizzle the cheese sauce over the hot fries, sprinkle additional Cajun seasoning if desired, and garnish with chives or green onions.
  10. Serve immediately with ranch dressing on the side if desired.

Notes

For extra spiciness, feel free to add cayenne pepper or more Cajun seasoning.
