Description

Delicious and nutritious vegetarian sandwiches featuring chickpea wraps, roasted veggie pitas, and cottage cheese toasts.

Ingredients

Scale
  • 1 can chickpeas
  • 4 tortilla wraps
  • Vegetables (bell peppers, zucchini, etc.)
  • 4 whole grain pita breads
  • 1 cup cottage cheese
  • 4 slices whole wheat or sourdough bread
  • 1 head lettuce
  • 2 tomatoes
  • 1 avocado
  • Spices (salt, pepper, herbs, etc.)

Instructions

  1. Start by mashing the chickpeas with a fork or a potato masher. Mix in your favorite spices such as salt, pepper, and any herbs you like. Spread this mixture evenly onto a tortilla wrap.
  2. Add a layer of fresh lettuce and sliced tomatoes on top. Roll it up tightly and your delicious chickpea wrap is ready to serve!
  3. Preheat your oven to 400°F (200°C). Chop the vegetables such as bell peppers and zucchini into bite-sized pieces.
  4. Toss them in olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 20-25 minutes until they are tender and slightly caramelized.
  5. Once cooked, fill your whole grain pita bread with the roasted vegetables and add a scoop of cottage cheese for a creamy finish.
  6. Toast slices of whole wheat or sourdough bread until they are golden brown.
  7. Spread a generous amount of cottage cheese on each slice. Top with sliced avocado and sprinkle with salt, pepper, or any herbs you desire.
  8. Serve all three types of vegetarian sandwiches together on a plate, creating a colorful and enticing meal.
