- 1 pound fresh green beans, trimmed
- 1 cup dairy-free cream or coconut milk
- 1 cup vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup crispy fried onions (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Bring a pot of water to a boil, add the green beans, and blanch for 3-4 minutes. Drain and set aside.
- In a large pan, sauté the chopped onion and minced garlic until translucent, about 3-4 minutes. Add sliced mushrooms and cook until soft.
- Stir in dairy-free cream (or coconut milk), vegetable broth, soy sauce, salt, and black pepper, then simmer for about 5 minutes.
- In a large baking dish, combine the blanched green beans with the sauce mixture.
- Sprinkle crispy fried onions on top (if using) and bake for 25-30 minutes, until bubbly and golden.
- Let it cool slightly, then serve warm.
Notes
To store leftovers, cool completely and transfer to an airtight container for 3-4 days in the fridge or freeze for up to 3 months.
