Description

This Vegan Green Bean Casserole is a comforting dish, perfect for any occasion, combining fresh green beans with a creamy sauce and topped with crispy fried onions.


Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 cup dairy-free cream or coconut milk
  • 1 cup vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup crispy fried onions (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Bring a pot of water to a boil, add the green beans, and blanch for 3-4 minutes. Drain and set aside.
  3. In a large pan, sauté the chopped onion and minced garlic until translucent, about 3-4 minutes. Add sliced mushrooms and cook until soft.
  4. Stir in dairy-free cream (or coconut milk), vegetable broth, soy sauce, salt, and black pepper, then simmer for about 5 minutes.
  5. In a large baking dish, combine the blanched green beans with the sauce mixture.
  6. Sprinkle crispy fried onions on top (if using) and bake for 25-30 minutes, until bubbly and golden.
  7. Let it cool slightly, then serve warm.

To store leftovers, cool completely and transfer to an airtight container for 3-4 days in the fridge or freeze for up to 3 months.
