Description
A warm and hearty vegan Coddle Soup, packed with a variety of vegetables and herbs for a comforting meal.
Ingredients

- 1 cup of vegetable broth
- 1 cup of water
- 2 medium potatoes, diced
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 2 medium carrots, sliced
- 1 cup of canned tomatoes, diced
- 1 cup of green beans, trimmed and cut
- 1 tbsp of olive oil
- 1 tsp of thyme
- 1 tsp of rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onions and minced garlic. Sauté until the onions are translucent.
- Stir in the diced potatoes, sliced carrots, and green beans. Cook for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth and water. Then, add the canned tomatoes (with their juice).
- Sprinkle in the thyme, rosemary, salt, and pepper. Stir well to combine.
- Bring the soup to a boil. Reduce the heat to low and let it simmer for about 20-25 minutes, or until the vegetables are tender.
- Blend it using an immersion blender for a smoother consistency, if desired.
- Garnish with fresh parsley and serve hot.
Notes
Customize the soup by adding lentils, chickpeas, or spices like red pepper flakes. Perfect with crusty bread.
