- 1 can Butter beans, drained and rinsed
- 2 tablespoons Olive oil
- 1 Onion, chopped
- 2 Carrots, diced
- 2 Celery stalks, diced
- 2 cloves Garlic, minced
- 1 teaspoon Smoked paprika
- 1 can Diced tomatoes
- 2 cups Vegetable broth
- 1 Lemon, juice and zest
- Salt and pepper, to taste
- Fresh parsley, for garnish (chopped)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté the vegetables until they are tender, about 5-7 minutes.
- Stir in the minced garlic and smoked paprika. Cook for an additional minute to let the flavors develop.
- Add the canned diced tomatoes, vegetable broth, and butter beans to the pot. Bring the stew to a boil. Reduce the heat to simmer and let it cook for about 15-20 minutes to allow the flavors to blend.
- Stir in the lemon juice and zest. Season the stew with salt and pepper to taste.
- Serve the stew hot, garnished with the chopped parsley.
