Ingredients

- 1 cup cooked beets, pureed
- 1 cup almond milk or any plant-based milk
- 1 tablespoon apple cider vinegar
- 1 cup whole wheat flour
- 1 tablespoon baking powder
- 1 tablespoon maple syrup
- 1/2 teaspoon salt
- 1/4 cup coconut oil, melted
- Optional: Vegan chocolate chips or nuts for added flavor
Instructions
- Start by preheating your waffle maker according to its instructions.
- In a mixing bowl, combine the almond milk and apple cider vinegar. Let it sit for a few minutes to create buttermilk.
- In another bowl, mix the whole wheat flour, baking powder, and salt.
- Combine the wet ingredients with the dry ingredients. Stir in the pureed beets, melted coconut oil, and maple syrup until smooth. If you’re using chocolate chips or nuts, fold them in gently.
- Lightly grease the waffle maker with a little coconut oil. Pour the batter into the waffle maker and cook according to the manufacturer’s instructions, usually about 5 minutes until golden brown.
- Carefully remove the waffles and serve warm.
Notes
Serve with fresh fruits, nuts, or a drizzle of maple syrup. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
