Description

Delicious baked pretzels infused with fresh rosemary for a unique flavor.


Ingredients

  • 4 cups all-purpose flour
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 1/2 cups warm water (about 110°F)
  • 1/4 cup baking soda
  • Coarse sea salt (for sprinkling)
  • 23 sprigs fresh rosemary, finely chopped (or 1 tablespoon dried rosemary)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the dough: In a large mixing bowl, combine the flour, salt, sugar, and instant yeast. Stir together until well mixed.
  2. Add water: Gradually pour in the warm water while mixing the dough. Stir until a shaggy dough forms.
  3. Knead the dough: Transfer the dough to a lightly floured surface. Knead the dough for about 5 to 7 minutes until it’s smooth and elastic.
  4. Place the kneaded dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm spot for about 60 minutes or until it doubles in size.
  5. Once the dough has risen, punch it down gently. Divide the dough into 8 equal pieces. Roll each piece into a long rope, about 24 inches long. Twist the rope into a pretzel shape and place it onto a baking sheet lined with parchment paper.
  6. In a large pot, bring 4 cups of water and the baking soda to a gentle boil.
  7. Carefully drop each pretzel into the boiling water for about 30 seconds. Remove with a slotted spoon and place back on the baking sheet.
  8. Brush each pretzel with the beaten egg and sprinkle with coarse sea salt and chopped rosemary.
  9. Preheat your oven to 425°F (220°C). Bake the pretzels for 12-15 minutes until they are golden brown.
  10. Let the baked pretzels cool for a few minutes before serving. Enjoy!

Notes

Knead until smooth, don’t over-knead. Boiling is crucial for texture.
