Description

A simple and hearty twist on traditional stuffed peppers, combining ground meat, vegetables, and spices.


Ingredients

  • 1 pound ground meat (beef, turkey, or chicken)
  • 4 bell peppers (any color)
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup cooked rice or quinoa (optional)

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add the ground meat and cook until browned. Drain excess fat.
  3. Add the chopped onion and minced garlic, cooking until softened.
  4. Stir in the diced tomatoes, oregano, basil, salt, and pepper.
  5. Cut the tops off the bell peppers and remove the seeds.
  6. Place the bell peppers in the skillet with the meat mixture, using the meat as a base.
  7. If using, stir in cooked rice or quinoa.
  8. Cover and cook for about 15-20 minutes until the peppers are tender.
  9. Serve warm.

Notes

Choose firm peppers without blemishes. Adjust seasoning to taste and monitor cooking time to keep peppers tender yet slightly crunchy.
