- 1 pound ground meat (beef, turkey, or chicken)
- 4 bell peppers (any color)
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup cooked rice or quinoa (optional)
Instructions
- Heat a large skillet over medium-high heat.
- Add the ground meat and cook until browned. Drain excess fat.
- Add the chopped onion and minced garlic, cooking until softened.
- Stir in the diced tomatoes, oregano, basil, salt, and pepper.
- Cut the tops off the bell peppers and remove the seeds.
- Place the bell peppers in the skillet with the meat mixture, using the meat as a base.
- If using, stir in cooked rice or quinoa.
- Cover and cook for about 15-20 minutes until the peppers are tender.
- Serve warm.
Notes
Choose firm peppers without blemishes. Adjust seasoning to taste and monitor cooking time to keep peppers tender yet slightly crunchy.
