Description
The unloaf sourdough recipe is a viral twist on traditional bread baking. Baked freeform without a loaf pan, this sourdough unloaf delivers rustic charm, a chewy interior, and a perfectly blistered crust.
Ingredients
500 g bread flour
100 g active sourdough starter (fed or unfed)
350 g water (room temperature)
10 g salt
Instructions
1. Mix flour, starter, and water in a large bowl. Rest 30 minutes.
2. Add salt and knead lightly until incorporated.
3. Cover and let rise for 4–6 hours, folding dough every hour.
4. Gently shape into a round, avoiding a tight structure.
5. Place dough on parchment paper, rest for 1 hour.
6. Bake at 450°F (230°C) for 35–40 minutes until golden.
7. Cool completely before slicing and serving.
Notes
For extra depth, experiment with specialty flours like bolted or einkorn.
Best eaten fresh but can be stored in a paper bag for 1–2 days.
Freezes well when sliced; reheat in an oven for best results.
Pairs beautifully with cheeses or fruity spreads like blackberry jam.
