Description

A delicious blend of pizza and quesadillas featuring crispy tortillas, gooey cheese, and savory toppings, perfect for quick meals or gatherings.


Ingredients

Scale
  • 12 flour tortillas (fajita size)
  • 3 cups shredded mozzarella cheese
  • 1 cup pepperoni slices
  • 3 cups pizza sauce (divided)
  • Optional: parsley for serving

Instructions

  1. Preheat a skillet or griddle to medium-high heat.
  2. Spray the cooking surface with cooking spray.
  3. Place one tortilla on the heated surface.
  4. Top with ¼ cup of shredded mozzarella cheese and allow it to melt.
  5. Add sliced pepperoni on top of the melted cheese.
  6. Pour ¼ cup of pizza sauce over the pepperoni.
  7. Sprinkle another layer of cheese on top.
  8. Place a second tortilla on top and press down gently.
  9. Flip the quesadilla once the bottom layer is golden brown and crispy.
  10. Cook the other side until it is also golden brown.
  11. Remove from the skillet and let cool for a minute.
  12. Slice the quesadilla into wedges and serve warm with remaining pizza sauce for dipping and optional parsley garnish.
