Delicious and nutritious quesadillas packed with vibrant vegetables and melted cheese.
Ingredients

- 4 Flour tortillas
- 2 cups Shredded cheese (cheddar or mozzarella)
- 1 Bell pepper (sliced)
- 1 Onion (sliced)
- 1 Zucchini (sliced)
- 1 cup Spinach
- 2 tablespoons Olive oil
- Salt and pepper to taste
- Optional: Salsa or guacamole for serving
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced bell peppers, onions, and zucchini; sauté until tender.
- Add spinach and cook until wilted.
- Season with salt and pepper.
- Place a tortilla in a separate skillet and sprinkle cheese on half.
- Add the sautéed vegetables on top of the cheese.
- Fold the tortilla over and cook until the cheese melts and the tortilla is golden brown.
- Flip and cook the other side until golden.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve with salsa or guacamole.
Notes
Store leftovers wrapped in plastic wrap or foil in an airtight container for up to 3 days. For longer storage, freeze separated with parchment paper.
