Description

Delicious and nutritious quesadillas packed with vibrant vegetables and melted cheese.


Ingredients

Scale
  • 4 Flour tortillas
  • 2 cups Shredded cheese (cheddar or mozzarella)
  • 1 Bell pepper (sliced)
  • 1 Onion (sliced)
  • 1 Zucchini (sliced)
  • 1 cup Spinach
  • 2 tablespoons Olive oil
  • Salt and pepper to taste
  • Optional: Salsa or guacamole for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced bell peppers, onions, and zucchini; sauté until tender.
  3. Add spinach and cook until wilted.
  4. Season with salt and pepper.
  5. Place a tortilla in a separate skillet and sprinkle cheese on half.
  6. Add the sautéed vegetables on top of the cheese.
  7. Fold the tortilla over and cook until the cheese melts and the tortilla is golden brown.
  8. Flip and cook the other side until golden.
  9. Repeat with remaining tortillas and filling.
  10. Cut into wedges and serve with salsa or guacamole.

Notes

Store leftovers wrapped in plastic wrap or foil in an airtight container for up to 3 days. For longer storage, freeze separated with parchment paper.
