Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 pound ground beef
  • 2 tablespoons tomato paste
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another 30 seconds until fragrant.
  4. Add ground beef and cook until browned, breaking it apart with a spoon as it cooks.
  5. Stir in tomato paste and cook for 2 minutes to develop flavor.
  6. Add diced tomatoes, kidney beans, black beans, and beef broth. Stir well.
  7. Sprinkle in chili powder, cumin, paprika, salt, and pepper. Stir to evenly distribute spices.
  8. Bring to a gentle boil, then reduce heat and let simmer uncovered for 20–25 minutes, stirring occasionally.
  9. Taste and adjust seasoning if needed. Serve hot with your favorite toppings.

Notes

For added spice, consider topping the chili with jalapeños or serving with sour cream and cheese.
