- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 pound ground beef
- 2 tablespoons tomato paste
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onions and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for another 30 seconds until fragrant.
- Add ground beef and cook until browned, breaking it apart with a spoon as it cooks.
- Stir in tomato paste and cook for 2 minutes to develop flavor.
- Add diced tomatoes, kidney beans, black beans, and beef broth. Stir well.
- Sprinkle in chili powder, cumin, paprika, salt, and pepper. Stir to evenly distribute spices.
- Bring to a gentle boil, then reduce heat and let simmer uncovered for 20–25 minutes, stirring occasionally.
- Taste and adjust seasoning if needed. Serve hot with your favorite toppings.
Notes
For added spice, consider topping the chili with jalapeños or serving with sour cream and cheese.
