Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 pound ground beef or Italian sausage
  • 1 can (28 ounces) crushed tomatoes
  • 3 cups chicken or vegetable broth
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. In a Dutch oven, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened.
  2. Add the ground beef or Italian sausage and cook until browned. Drain any excess fat from the pot.
  3. Stir in the crushed tomatoes, chicken or vegetable broth, dried basil, and oregano. Bring this mixture to a simmer.
  4. Add the broken lasagna noodles and cook according to package instructions until al dente.
  5. Stir in the ricotta cheese and half of the shredded mozzarella cheese until melted and well combined.
  6. Season with salt and pepper to taste.
  7. Serve hot, topping each bowl with remaining mozzarella cheese, grated Parmesan cheese, and a sprinkle of fresh herbs.
