- 8 oz rotini pasta
- 1 cup cottage cheese (full fat)
- 1/4 cup grated Parmesan cheese
- 1 garlic clove
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp onion powder
- 1/4 cup reserved pasta water
- 2 tbsp sun-dried tomatoes, chopped
- Fresh parsley or basil (optional)
Instructions
- Cook the Pasta: Start by bringing a large pot of salted water to a boil. Once boiling, cook the rotini according to the package instructions until it is al dente, about 8-10 minutes.
- Reserve Pasta Water: Before draining the pasta, ensure to reserve 1/4 cup of the pasta water for the sauce.
- Make the Sauce: In a blender, combine the cottage cheese, Parmesan cheese, garlic, salt, pepper, onion powder, and reserved pasta water. Blend until the mixture is smooth and creamy.
- Combine Pasta and Sauce: Once drained, return the pasta to the pot off the heat. Pour the blended sauce over the pasta and stir until thoroughly coated.
- Finish and Serve: Top with chopped sun-dried tomatoes and fresh herbs if desired. Serve immediately, adding extra Parmesan if you like.
Notes
