Description

A warm and comforting fall dish featuring sweet potatoes, cranberries, and apples, perfect as a side or main course.


Ingredients

  • 4 medium sweet potatoes, scrubbed and dried
  • 2 tbsp unsalted butter (or coconut oil)
  • 1 tbsp brown sugar
  • 1 tbsp pure maple syrup
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ½ tsp salt
  • 1 cup fresh cranberries
  • 1 apple, diced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Poke holes in the sweet potatoes with a fork and bake for 45-60 minutes until tender.
  3. Cut the sweet potatoes in half lengthwise and scoop out the flesh into a bowl, leaving the skins intact.
  4. Mash the sweet potato flesh with butter, brown sugar, maple syrup, cinnamon, nutmeg, and salt until smooth.
  5. Fold in fresh cranberries and diced apple.
  6. Spoon the mixture back into the sweet potato skins.
  7. Return to the oven and bake for an additional 20-25 minutes until heated through and slightly golden on top.
  8. Serve warm and enjoy!

Notes

You can prepare the filling a day ahead and bake just before serving. The dish pairs well with roasted meats or a simple grain salad.
