Description

A delightful dish featuring tender chicken cooked in a rich coconut milk sauce, infused with fresh vegetables and zesty lime.


Ingredients

  • 1 lb chicken thighs, cut into chunks
  • 1 can (14 oz) coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic; sauté until translucent.
  3. Add the chicken pieces, paprika, salt, and pepper. Cook until the chicken is browned on all sides.
  4. Stir in the bell pepper, tomatoes, and coconut milk.
  5. Reduce heat, cover, and simmer for about 20 minutes until the chicken is cooked through.
  6. Add lime juice before serving.
  7. Garnish with fresh cilantro and serve hot.
