- 1 lb chicken thighs, cut into chunks
- 1 can (14 oz) coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tomatoes, diced
- 1 lime, juiced
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic; sauté until translucent.
- Add the chicken pieces, paprika, salt, and pepper. Cook until the chicken is browned on all sides.
- Stir in the bell pepper, tomatoes, and coconut milk.
- Reduce heat, cover, and simmer for about 20 minutes until the chicken is cooked through.
- Add lime juice before serving.
- Garnish with fresh cilantro and serve hot.
