Ingredients
16 oz Velveeta or American melting cheese, cubed
1 cup heavy cream
1/2 cup roasted green chiles, chopped
1/4 cup onion, finely diced
1 fresh jalapeño, minced (optional for extra heat)
1/4 cup fresh cilantro, chopped
1 Roma tomato, diced
1 teaspoon garlic powder
1/2 teaspoon cumin
Salt to taste
Optional garnish: queso fresco, extra cilantro, diced tomatoes
Instructions
1. In a saucepan over medium heat, warm heavy cream until just steaming.
2. Add cubed cheese and stir until melted and smooth.
3. Stir in roasted chiles, onion, jalapeño, garlic powder, cumin, and salt.
4. Reduce heat to low and cook for 5 minutes, stirring occasionally.
5. Stir in cilantro and diced tomato just before serving.
6. Serve hot with tortilla chips, tacos, or drizzle over nachos.
Notes
Keep heat low after melting cheese to prevent separation.
Add a splash of cream or milk when reheating to restore smoothness.
For vegetarian queso, omit any meat toppings like chorizo.
