- 1 lb smoked sausage, sliced
- 2 cups potatoes, cubed
- 1 cup bell pepper, diced
- 1 cup onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sliced smoked sausage and cook until browned, about 5-7 minutes.
- Add the chopped onion and bell pepper to the skillet. Cook until they are soft and onions are translucent.
- Stir in the cubed potatoes, garlic powder, paprika, salt, and pepper. Mix well.
- Cover the skillet and cook on low heat for about 20-25 minutes, stirring occasionally, until the potatoes are tender.
- Remove the lid and let it cook for an additional 5 minutes to brown the potatoes.
- Serve hot, garnished with fresh parsley if desired.
