Delicious and easy-to-make sticky chicken rice bowls, perfect for meal prep and sharing.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken thighs, diced
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • 2 green onions, chopped
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Sesame seeds for garnish

Instructions

  1. In a bowl, mix soy sauce, honey, sesame oil, garlic, and ginger to create the marinade.
  2. Add diced chicken to the marinade and let it sit for at least 10 minutes.
  3. In a skillet, cook the marinated chicken over medium heat until browned and cooked through, about 5-7 minutes.
  4. Add the mixed vegetables and stir-fry for another 3-4 minutes until tender.
  5. Serve the chicken and vegetables over cooked rice, garnish with chopped green onions and sesame seeds.
