Ingredients

- 2 cups cooked rice
- 1 lb chicken thighs, diced
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp sesame oil
- 1 cup mixed vegetables (bell peppers, carrots, broccoli)
- 2 green onions, chopped
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Sesame seeds for garnish
Instructions
- In a bowl, mix soy sauce, honey, sesame oil, garlic, and ginger to create the marinade.
- Add diced chicken to the marinade and let it sit for at least 10 minutes.
- In a skillet, cook the marinated chicken over medium heat until browned and cooked through, about 5-7 minutes.
- Add the mixed vegetables and stir-fry for another 3-4 minutes until tender.
- Serve the chicken and vegetables over cooked rice, garnish with chopped green onions and sesame seeds.
