- 1/2 teaspoon cinnamon
- 1/4 teaspoon sea salt
- 1 tablespoon coconut sugar
- 1 teaspoon cinnamon (for rolling)
Instructions
- Preheat your oven to 350 degrees Fahrenheit and line a large cookie sheet with parchment paper.
- In a medium-sized bowl, stir together the dry ingredients: tiger nut flour, arrowroot flour, collagen, baking soda, cinnamon, and sea salt.
- Add the wet ingredients: coconut oil, honey, vanilla extract, and apple cider vinegar or cream of tartar. Mix well, but avoid over-mixing the dough.
- Use a cookie scoop to portion out the dough and place on the lined cookie sheet, spacing them evenly.
- Bake in the preheated oven for 8-10 minutes, or until edges are golden brown.
- Let cookies cool slightly before serving. For a sugared coating, mix cinnamon and sugar, roll each dough ball in the mixture, and flatten slightly.
