Ingredients

  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar or cream of tartar
  • 1/2 teaspoon baking soda, sifted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1 tablespoon coconut sugar
  • 1 teaspoon cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and line a large cookie sheet with parchment paper.
  2. In a medium-sized bowl, stir together the dry ingredients: tiger nut flour, arrowroot flour, collagen, baking soda, cinnamon, and sea salt.
  3. Add the wet ingredients: coconut oil, honey, vanilla extract, and apple cider vinegar or cream of tartar. Mix well, but avoid over-mixing the dough.
  4. Use a cookie scoop to portion out the dough and place on the lined cookie sheet, spacing them evenly.
  5. Bake in the preheated oven for 8-10 minutes, or until edges are golden brown.
  6. Let cookies cool slightly before serving. For a sugared coating, mix cinnamon and sugar, roll each dough ball in the mixture, and flatten slightly.
