Description

A velvety and creamy cheese dip made with sharp cheddar and cream cheese, perfect for parties or a cozy evening.


Ingredients

  • 3 cups sharp cheddar cheese, freshly shredded
  • 8 oz cream cheese, softened
  • 3/4 cup whole milk
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 clove minced garlic
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/2 cup crumbled cooked bacon
  • 1 tbsp chopped parsley (optional)

Instructions

  1. Melt the 2 tablespoons of unsalted butter in a medium saucepan over medium heat.
  2. Add the 2 tablespoons of flour and whisk continuously for about 1 minute to form a roux.
  3. Pour in the 3/4 cup of whole milk gradually while whisking constantly to prevent lumps.
  4. Stir in the 8 oz of softened cream cheese until the mixture is smooth.
  5. Add the minced garlic and paprika, cooking for another minute.
  6. Lower the heat to medium-low and slowly stir in the 3 cups of shredded sharp cheddar cheese a handful at a time until melted.
  7. Taste the dip and add the 1/4 teaspoon of salt as necessary.
  8. Fold in the 1/2 cup of crumbled bacon and garnish with parsley if desired.

Notes

For a healthier option, consider using reduced-fat cheese or omitting the bacon. Store leftovers in an airtight container in the refrigerator for 3-4 days.
