- 3 cups sharp cheddar cheese, freshly shredded
- 8 oz cream cheese, softened
- 3/4 cup whole milk
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 clove minced garlic
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/2 cup crumbled cooked bacon
- 1 tbsp chopped parsley (optional)
Instructions
- Melt the 2 tablespoons of unsalted butter in a medium saucepan over medium heat.
- Add the 2 tablespoons of flour and whisk continuously for about 1 minute to form a roux.
- Pour in the 3/4 cup of whole milk gradually while whisking constantly to prevent lumps.
- Stir in the 8 oz of softened cream cheese until the mixture is smooth.
- Add the minced garlic and paprika, cooking for another minute.
- Lower the heat to medium-low and slowly stir in the 3 cups of shredded sharp cheddar cheese a handful at a time until melted.
- Taste the dip and add the 1/4 teaspoon of salt as necessary.
- Fold in the 1/2 cup of crumbled bacon and garnish with parsley if desired.
Notes
For a healthier option, consider using reduced-fat cheese or omitting the bacon. Store leftovers in an airtight container in the refrigerator for 3-4 days.
