- 1 whole turkey (12–14 pounds)
- 1 cup unsalted butter, softened
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh sage, chopped
- 1 tablespoon garlic powder
- Salt and pepper to taste
- 4 cups chicken broth
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
Instructions
- Preheat your oven to 325°F (165°C).
- Mix softened butter, rosemary, thyme, sage, garlic powder, salt, and pepper in a bowl.
- Pat the turkey dry and gently lift the skin from the turkey breast to spread some herb butter underneath.
- Rub the remaining butter all over the turkey.
- Place the turkey in a roasting pan and surround it with onion, carrots, and celery.
- Pour chicken broth into the pan.
- Roast the turkey for about 13-15 minutes per pound, basting occasionally with the pan juices.
- Check the turkey is done when it reaches an internal temperature of 165°F (75°C). Let it rest before carving.
Notes
Don’t skip the resting time after cooking; it helps redistribute the juices.
