- 2 cloves garlic, minced

- 1/4 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 1 tablespoon sriracha (adjust to taste)
- 1/2 cup coconut milk
- 1 tablespoon lime juice
- 1 teaspoon sesame oil
- 2 tablespoons chopped peanuts (for garnish)
- 2 tablespoons fresh cilantro, chopped (for garnish)
- Steamed rice or noodles (for serving)
Instructions
- Heat vegetable oil in a large skillet over medium heat. Season chicken with salt and pepper. Cook chicken for 6-7 minutes per side until golden brown and cooked through. Remove and let rest for 5 minutes.
- Add minced garlic and ginger to the same skillet, sauté for 1-2 minutes until fragrant.
- Pour in peanut butter, soy sauce, rice vinegar, honey, sriracha, and coconut milk. Whisk until smooth and simmer for 2-3 minutes until glossy.
- Stir in lime juice and sesame oil, adjusting flavors as needed.
- Cut rested chicken into strips or cubes, add back to skillet, and toss in sauce until well coated.
- Serve over steamed rice or noodles, garnished with peanuts and fresh cilantro.
