Ingredients

- 1 lb chicken breast, diced
- 1 cup quinoa or rice, cooked
- 2 cups mixed vegetables (e.g., bell peppers, carrots, broccoli)
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce
- 2 tbsp honey or maple syrup
- 1 tbsp lime juice
- 1 clove garlic, minced
- 1 tsp grated ginger
- Salt and pepper to taste
- Chopped green onions and cilantro for garnish
Instructions
- Cook quinoa or rice according to package instructions (15-20 minutes for quinoa, 18-20 minutes for rice).
- Cook chicken in a pan over medium heat until no longer pink, about 7-10 minutes, seasoning with salt and pepper.
- Make peanut sauce by whisking together peanut butter, soy sauce, honey or maple syrup, lime juice, garlic, and ginger in a bowl until smooth.
- Add mixed vegetables to the pan with the chicken and sauté for 3-5 minutes until tender.
- Assemble bowls with quinoa or rice, sautéed chicken, and vegetables, then drizzle with peanut sauce.
- Garnish with chopped green onions and cilantro, then serve immediately.
Notes
Can be made vegan by substituting chicken with chickpeas or tofu and using maple syrup instead of honey.
