Ingredients

- 2 cups shredded cooked chicken
- 4 large lettuce leaves or tortillas
- 1 cup finely shredded cabbage
- 1 cup julienned carrots
- 1/2 cup thinly sliced bell pepper
- 1/4 cup chopped cilantro
- 1/4 cup sliced green onions
- 1/4 cup peanut sauce or Thai dressing
- Salt and pepper to taste
Instructions
- In a bowl, combine shredded chicken, cabbage, carrots, bell pepper, cilantro, and green onions.
- Drizzle with peanut sauce or Thai dressing and mix well.
- Season with salt and pepper.
- Lay the lettuce leaves or tortillas flat.
- Place the chicken mixture in the center of each wrap.
- Fold the sides in and roll tightly.
- Serve immediately, or wrap in foil for a quick lunch on the go.
Notes
For a spicy version, stir in sriracha or a chopped red chili to the peanut sauce. Use lettuce for a low-carb option or tortillas for a softer wrap.
