Description

Ingredients

  • 1 pound ground beef
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 cup corn (fresh, frozen, or canned)
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 12 cups shredded cheese (optional, for serving)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. In a large pot or skillet, cook the ground beef over medium heat until it’s browned. Drain excess fat.
  2. Stir in the chopped onion, bell pepper, and garlic. Cook until the onions are translucent.
  3. Add the black beans, kidney beans, diced tomatoes, corn, and beef broth. Stir in chili powder, cumin, salt, and pepper. Mix everything well.
  4. Bring the mixture to a boil, then reduce the heat. Let it simmer for about 30 minutes to allow the flavors to meld together. If using a crockpot, you can cook on low for 4-6 hours.
  5. Taste for seasoning and adjust if needed. Serve hot, topped with shredded cheese and a sprinkle of fresh cilantro if desired.
