- 1 pound ground beef
- 1 cup chopped onion
- 1 cup chopped bell pepper
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes with green chilies
- 1 cup corn (fresh, frozen, or canned)
- 2 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1–2 cups shredded cheese (optional, for serving)
- Fresh cilantro (optional, for garnish)
Instructions
- In a large pot or skillet, cook the ground beef over medium heat until it’s browned. Drain excess fat.
- Stir in the chopped onion, bell pepper, and garlic. Cook until the onions are translucent.
- Add the black beans, kidney beans, diced tomatoes, corn, and beef broth. Stir in chili powder, cumin, salt, and pepper. Mix everything well.
- Bring the mixture to a boil, then reduce the heat. Let it simmer for about 30 minutes to allow the flavors to meld together. If using a crockpot, you can cook on low for 4-6 hours.
- Taste for seasoning and adjust if needed. Serve hot, topped with shredded cheese and a sprinkle of fresh cilantro if desired.
