Description

Ingredients

  • 1 cup black beans, rinsed and drained
  • 1 avocado, diced
  • 1/2 cup red onion, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup cilantro, chopped
  • 1/4 cup lime juice
  • 3 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips for serving (optional)

Instructions

  1. In a large bowl, combine the chopped chicken, cherry tomatoes, corn, black beans, avocado, red onion, cheddar cheese, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss everything together until well combined.
