Description

A delightful combination of sweet and savory, these stuffed peppers are filled with chicken, rice, and pineapple, topped with teriyaki sauce.


Ingredients

  • 2 bell peppers (any color)
  • 1 cup cooked rice
  • 1 chicken breast, cooked and diced
  • 1 cup fresh pineapple, chopped
  • 1/4 cup teriyaki sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Mix the cooked rice, diced chicken, chopped pineapple, teriyaki sauce, olive oil, salt, and pepper in a large bowl.
  4. Fill each bell pepper with the chicken and rice mixture.
  5. Place the stuffed peppers upright in a baking dish.
  6. Cover with foil and bake for 25-30 minutes, until the peppers are tender.
  7. Garnish with chopped green onions before serving. Enjoy!

Notes

These stuffed peppers can be made ahead of time and stored in the refrigerator for 3-4 days or frozen for 2-3 months.
