Description
A quick and flavorful breakfast with spiced tereso sausage and scrambled eggs, perfect with tortillas or beans.
Ingredients
1 tbsp olive oil or bacon fat
1 small onion, chopped (optional)
1/2 lb tereso sausage, casing removed
4–5 large eggs
Salt and pepper to taste
Tortillas, cilantro, avocado (optional)
Instructions
1. Heat skillet and add oil.
2. Cook onions until softened.
3. Add tereso and brown fully.
4. Crack eggs into skillet and stir until set.
5. Season and serve with tortillas.
Notes
For meal prep, cook tereso separately and add fresh eggs when reheating.
