Description

A delicious and wholesome protein bar recipe that doesn’t require protein powder. Packed with oats, nut butter, and seeds, these bars are a perfect snack for any time of day.


Ingredients

Scale
  • 1.25 cups oats
  • 1/2 cup almond flour
  • 3/4 cup cashew butter
  • 1/2 cup hemp hearts
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/2 cup mini chocolate chips
  • 1/4 cup mini chocolate chips (melted and cooled)
  • 1 tbsp coconut oil (for melting chocolate chips)

Instructions

  1. Gather all your ingredients and prepare your workspace.
  2. In a large mixing bowl, combine the oats and almond flour. Mix well.
  3. Add the cashew butter to the dry ingredients and mix until combined.
  4. Stir in the hemp hearts, coconut oil, maple syrup, salt, and vanilla extract until a dough-like consistency forms.
  5. Fold in the mini chocolate chips.
  6. Line a square baking dish with parchment paper.
  7. Press the mixture firmly into the dish.
  8. Melt the remaining mini chocolate chips with the coconut oil in a microwave-safe bowl.
  9. Drizzle the melted chocolate over the pressed mixture.
  10. Refrigerate for at least one hour to set.
  11. Cut into bars and enjoy!

Notes

Store protein bars in an airtight container in the refrigerator for up to a week or freeze for longer storage.
