Description

A delightful dish that combines the best flavors of a taco in a fresh and healthy salad. Perfect for a quick and satisfying meal.


Ingredients

  • 1 pound ground beef (or ground turkey)
  • 1 packet taco seasoning
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup corn (canned or frozen)
  • 1 whole avocado, diced
  • 1 cup Doritos (taco flavor)
  • ½ cup ranch dressing (or your favorite dressing)

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain any excess fat.
  2. Add the taco seasoning to the meat, following package instructions to include water and let simmer for a few minutes.
  3. Chop the romaine lettuce and place it in a large salad bowl.
  4. Add the cherry tomatoes, corn, diced avocado, and shredded cheese to the lettuce in the bowl.
  5. Once the ground beef is cooked and seasoned, add it to the salad bowl and gently mix all the ingredients together.
  6. Just before serving, sprinkle the Doritos over the salad to maintain their crunch.
  7. Drizzle ranch dressing over the top, toss if desired, and serve immediately.

Notes

For a healthier version, use lean ground turkey and reduce the cheese or dressing. You can also substitute Greek yogurt for ranch dressing.
